Your maximum health and Stamina will match what your Wellness is. It decreases with death, injury, and increases with good quality food & drink. There is a limit on how quickly you can increase Wellness, and you cannot increase it while the buffs 'Good or Average quality Drink or Food' are active. Enjoy.
