This is how I get around Steam's awful forced updating system, hopefully it helps you too. This method also works for reversing Skyrim updates, and presumably Starfield as well, but I haven't tried it in Starfield, and the dramatically increased file size of that game would make this a lot less practical.

    how do I revert back to an old version if I didn't have an old file saved? my games automatically update for me so I did not see this coming.

      You can force Steam to download old versions of the game for you using its built in console, but I'm not very familiar with how that works myself, I'm sure other tutorials around that will show up soon, this is meant as a simple, long term solution once you've done it the normal way with the Steam console, because this can be done very quickly at any time and will work with any update that comes in the future.
