You can get cave mushrooms from Caprity.

Caprity produces cave mushrooms instead of red fruit, so you can get them through the ranch.

Installation:
Unzip file and place PAK file in Palworld\Pal\Content\Paks\~mods
If you don't have a ~mods folder create one

Dedicated server installation:
Unzip file and place PAK file in Steam/steamapps/common/PalServer/Pal/Content/Paks/~mods
If you don't have a ~mods folder, create one

It patches the "DT_ItemLotteryDataTable", and would be incompatible with any mods which do the same
