An autosave at the start of Eastward Bound, allowing you a chilled, peaceful ride into chapter 2, knowing that everything was done correctly in chapter 1.
Also, A mostly minimalist file with the legwork for the Legend of the East satchel done, apart from having the damn money to buy the tools.

Why pick this one?
Some details on the save, to aid the decision:
All Gold medals for the Chapter 1 missions, done first time of asking. This is important because it means that your O'Driscoll and Wolf kill count won't be inflated by mission replays (I really really hate that this is a thing)
O'Driscoll in the barn, and guards at the train all spared.
Everyone in the camp spoken to after the second mission, and again after the third mission (This is, for some reason, absolutely vital to me)
The two missable letters collected. It blows my mind that some 'complete' fresh C2 saves don't have these
I did not pick up the premium cigarette pack on the train. This means that your log is free of the cigarette card task until you choose to start it, and your compendium is cigarette card free (the compendium must be minimal, because of reasons I cannot properly explain)
Finally, after completing Eastward Bound and collecting its very easy Gold medal, you get to enjoy the initial camp interactions that cannot be kept with an immediate chapter 2 save, and be safe in the knowledge that the chapter is truly as fresh as it is possible to be. Speak to Lenny and Micah, get Dutch's pipe request in chapter 2, and so forth
I'll end this by saying that I hate wolves, and leave you to guess how much time I spent trudging through the first and second missions in their entirety before I got gold in Enter, Pursued..

UPDATE: I've added a second file at the very beginning of chapter 2, but with the following done:
- Pearson, Dutch, Mary-Beth and Susan's item requests all active (I'm not doing Hosea's, just walk forward 10 paces and open the damn book yourselves)
- 1 Deer Studied, tracked, killed and skinned, and the skinned carcass donated to Pearson. This gives you 3/3 killed/skinned, and completes Master Hunter 1 with one kill. It also completes the deer compendium entry
- The horse is now level 4 bonded, by leading it in a circle just outside of camp. I've also quickly jumped on the 'free' TW in the camp, completing the TW compendium entry
- Everyone in the camp interacted with multiple times, including Lenny and Micah while they were there. Arthurs two books and Dutch's speech notes also collected.
- Enough camp chores done to get to 3/8 on Dead Eye, and a little jog around to get Stamina to 3/8. Now all Arthur's cores are level 3/8. Ah, consistency.
- Oh, and Eastward Bound gold medal, obviously
The one downside of this save is that Arthur is 1 level below perfect weight. I didn't want to cook anything and add to the completion, and certainly not go buy any food. There's enough venison and canned food to munch and sleep your way to perfect weight immediately though.
The very small amount of map exploration done is the little area by the railway just outside of camp. This was necessary to get the deer, bond the horse, and trigger the Pearson request. Nothing else triggered, explored or collected. For what it's worth, this one is my personal 'golden' save to return to for a restart.

UPDATE 2: One last file, this one less minimal than I'd have liked, but I really cba redoing what I did. Details:
- All golds in Chapter 1, done first time. Activity log kept clean of cigarette cards, and missable letters collected. Everyone spared.
- Americans At Rest completed, gold
- Money Lending and Other Sins ACTIVE - Chick Matthews and Lily Millet collected. I've left Wrobel alone, because you might have a particular way you want to deal with it (Antique watch, steal the horse, shoot him in the plums, you know, standard stuff). Just hand in the two debts to gain access to the ledger, or do Wrobel for the full set in one swoop.
- Horse is Level 4 bonded, Tennessee Walker compendium filled out.
- Only weapon bought is Varmint Rifle
- Max possible honour for this point in the story (that sweet 25% discount)
- Father and Sons building a house timed event completed, visited at every stage (Had to be done as it starts when going by Valentine).
- 5 (+1) Chance Encounters completed:
> The 2 O'Driscolls that are literally everywhere - "You shouldn't be wandering around here...". This one doesn't count as a Chance Encounter.
> The public hanging in Valentine.
> The drunk guy asking for directions in Valentine
> The single O'Driscoll in Valentine - "That queasy feeling in your stomach?..."
> The two O'Driscolls shaking down a man against a tree. Defended the guy.
> The Wolf attacking a guy in West Elizabeth. Managed to kill the wolf before he was mortally wounded, and he's living a carefree life, probably.
- Newspaper purchased and a Bath taken (Dammit I regret these).
- Two recipe types crafted. Arrows (for hunting) and food (for... eating)
- 2 Ranters, Ravers and Campaigners spoken to: Thomas Downes and Mickey the Homeless Vet. Charity Handbill obtained.
- Dutch's speech notes collected
- Susan's Herb request, Mary-Beth's Pen request, and Dutch's Pipe request active. Pearson's Rabbit request COMPLETED and jacket obtained.
- Finally, the reason we're all here: All Satchel of the East pelt requirements obtained. Only required animals have been killed, all others have not been killed or studied. Most required animals required killed ONCE, tracked ONCE, and skinned. The compendium is very happy. The wolf random event coughed up the perfect wolf pelt, fortuitously, else I'd have restarted and avoided it.
- Valuables, Crafting and Carcass requirements done.
- 9 Deer killed. 2 in chapter 1 and 7 for Pearson. Thanks to shenanigans, it appears in the compendium that all deer have been skinned. Winning!
- 4 Rabbit killed. 1 for Pearson, 3 to complete Master Hunter 2, so I could then track the other animals needed, and thus complete Master Hunter 3. Horseman 1 has 4/5 rabbits killed from horseback. The first Hosea mission will see to the final one (Or just go and kill one, whatever). The 3 spare Perfect Rabbit Pelts given to the trapper.
The only areas explored are necessary to get the animals. Great pains were taken to not go further than necessary. Other than the above, literally nothing has been triggered, encountered, unlocked, bought, crafted, shot, beaten or stolen. One snag is I'm low on money (cos I've done bugger all else in the save) but a trip to get the gold bar and to the fence will see you right. If you're into this kind of thing, you'll get it. If not, c'est la vie...
Have a look, load it up, and see if it's minimal enough for you. I really really really regret triggering a couple of those random encounters (some are basically unavoidable if you want to pass through Valentine a few times) and taking a bath was a decision I'll regret probably forever, but it is what it is.
Oh and one final thing: I've regularly Mister'd and Partner'd my way around the few towns I went near, to check the townsfolk don't dislike Arthur for breathing heavily 3 miles away, and they don't - no "Hope you're done causing trouble around here" for you (until 0.0001 seconds into trying to play the game. Damn Rockstar and their bad decisions)
