Thanks for the help everyone, I figured it out! I had a conflict with the mod Realistic Aspen Trees, uninstalled that, all good now. Thanks for helping!!
There appears to be a conflict with the LOD meshes in the folder Skyrim/Data/Meshes/Terrain. Try deleting the Terrain folder manually and let NMM reinstall SFO v2.0c (assuming you use NMM, which I don't lol).

I have no idea sorry, maybe the way your PC is rendering it to counter any strain on it? Sorry, I'm awful at that side of PC's lol. However, that is still a great shot
