He's supposed to be a GOD. A literal god. And your level 1 noob dies to bandits with arrows. Or wolves. Or just tripping and falling down the steps at Markarth, I mean, come on, now.

Alduin should be able to kill your level 1 punk with a hard glare.
SO: This mod fixes it so Alduin is a literal god.
He's level 150, and will have 15750 health the first time you fight him. He'll have 20000 health in Sovngarde.
That is not a typo. Twenty thousand health. He'll also have ten thousand magica and stamina.
You want to beat up a god?
You need to prepare, kid. Get serious about becoming the REAL "Dragonborn" who can toe-to-toe anything. Weapons. Armor. Healing. Lift some weights. Take your vitamins. And bring a wagon-load of healing potions.
Because this fight is gonna be long and tough, you're fighting a literal god.
Sorry, your level 1 fisting kajiit ain't gonna do it against Alduin no more, kid. You WILL die trying that.

All this mod does is change two character entries - AlduinBase, and MQ304Alduin. And all it does is alter Alduin's level/health/magica/stamina calculation from "auto-calc" to set numbers, so it should be okay to pop it in or pull it out at any time in your game Alduin ISN'T actually loaded. There are NO changes to scripts, attacks, armor or anything else. This means his ability to dish out the hurtin' on you isn't changed, just his ability to take damage you deal to him. He becomes extremely tanky (and will be ridiculously tanky for characters who can't dish out three-digit damage to him). However, he is not unbeatable if you plan for it. And hey, if your old high-level character build was one-punching Alduin? Well, now it'll take more than just one punch.
Upside: Extremely lore-friendly. This is Alduin, the World-Eater, first-born of Akatosh, a literal god in the Elder Scrolls universe. He's honestly supposed to be a titan.
Downside: If your play-strategy was to have the Heroes of Sovngarde take him on while you just dodge flaming fireballs from the sky and wait until they get him? Not happening, they'll get stomped. Only Tsun has the physical ability to take him on, because he's a god, too. And, you know, he's flagged "essential." Soooo... Maybe hide behind Tsun so he gets aggro'ed by a fireball from the sky conkin' him on the noggin and joins in the fight.
Anyone who wants to port this to SE/AE, go right ahead - I don't have them so I can't do it myself. Just note who you got it from, please.
