I have revitalized the game via Skyrim SE/AE modlists with my modification preferences.
One I have been playing recently, Licentia Black, has an additional modlist for quests that includes most of the epic and medium sized quests.
I didn't think this was possible in a playable build but the author is a master at creating patches in an optimal order and it actually works as long as you play the quests one at a time to completion.
It features Rudy ENB for NAT3 which creates a dark and immersive tone.
Just be warned that the standard version is very much NSFW but there is a never nude version if you prefer.
The first step is to download and install Wabbajack which is the application that is used to create and install the modlists.

Then run Wabbajack and either download a modlist from the Wabbajack modlist gallery or some modlists have their files available on Nexus in which case you use the Install from File option.
Some of the modlists like Licentia Black require logins to external sites like Lovers Lab and some also like Licentia Black install a completely self-contained modlist that includes the associated game version which is independent of the game installed via Steam.
This means that you could have multiple modlists installed which are different versions of the game that are not affected by game updates.
