Finally got the Follower I've been after for many hours of game time, Ysolda. She is a standard NPC (as you well know), but I used Amazing Follower Tweaks SE to turn her into a Follower. Could have done this straight away, but it means you forfeit any quests related to the NPC you alter, and she had a couple of them.

You can't really go wrong with Bijin's NPC overhauls. They are bloody awesome. Spent a bit of time kitting her out with equipment and making her look the part. Currently have a gap issue with that particular armour, and not sure why. Contacted the author, and hopefully get some form of reply soon. If anybody else knows, feel free to comment or message me. I found an elegant solution for now, using a scarf from another mod, which doesn't clip too badly. Then used a bandolier with shoulderpad to cover it up some more. Worked out quite nice!

Darker Nights - I altered the screenshot to be slightly brighter, but the nights are much darker than this. Shot wasn't quite as clear as I thought it to be, but I liked the stance so went with it.
