Sometimes hunted animals are hung up to drain the blood. The fur or skin is left on in order to help keep the meat fresh. If Skyrim were 100% realistic then we would need to skin the animals, cut them up, and pack them with salt and snow in order to keep the meat from rotting. In a time before refrigeration!
