The only EngineFixes.toml you will need, a tweaked file that includes all relevant changes to ensure a stable and issue-free experience for your Skyrim.

I did this for my game, but I am sharing this here so other people can benefit as well and as a safe storage.
Tweaks
[Patches]
MaxStdio = 8192
Solves the "Corrupted Save" bug on large load orders by setting the maximum number of open file handles to 8192.
[Patches]
RegularQuicksaves = true
Makes Quicksaves into Regular saves so they don't cause issues.
[Experimental]
SaveGameMaxSize = true
Increases the maximum size of a save game from 64 MB to 128 MB to fix the "crash on save" issue in long-running saves.
[EngineFixes]
CleanSKSECosaves = true
Delete SKSE cosaves that have no matching save and unnecessarily clutter the Saves folder.
Conclusion
Just install and overwrite SSE Engine Fixes. All credits go to aers.
