This mod is uploaded for those who want it. If you have no use for it, then there's no need to bother yourself with reading further.
I love animals and was disappointed to find out there's no mod that would replace these models. Now that I found the solution for myself, I thought I'd help out anyone who wishes to get the same tweak for their game since there's no alternative on Nexus yet.
Install with your preffered mod manager or simply drop contents of this archive into your Skyrim SE folder. Overwrite all other files if prompted.
This is a simple empty mesh / model replacer, NO .esp or anything complicated. Install or deinstall whenever.
Note that these items will be inaccessible thus you won't be able to harvest them as well; you can still buy the ingridients from vendors (or hunt them if you wish) though.
Regular live rabbits will still be present in the world and weren't touched at all. There's a mod for Immortal Bunnies (and foxes) if you wish to further shield yourself from animal death trauma.
