Being a Monty Python fan, this is something I've wanted for a long time - a cow flinging catapult that I can use to defend my castle from those silly English pigdogs. And the occasional bandit group. Thank you to Junk @ JunksMods for this. The original mod for Skyrim is here. With Junk's permission, I just converted to Special Edition. Meshes are SE format, esp is cleaned and form 44, assets are packed in a compressed archive for convenience.

DESCRIPTION
Adds a craft-able, portable, aim-able Catapult and Cow Catapult to Skyrim.
Yep, you read that right. You can now own your very own catapult that flings cows through the air.
7 Firewood, 7 Raw Beef, and 1 Cow Hide are all you need to craft this thing at any forge.
You can then drop the catapult from your inventory and activate it to choose from 2 different catapults.
One regular, and one that flings cows.
You can aim and move it in any direction you want, then fire.
When you're done spreadin' milk all over Skyrim, simply pick the thing back up and put it back in your inventory.
