This was an idea I had in the back of my mind for a while. What if the people you often see but can't interact actually mattered? this is just the start of a project I hope to undertake, to give almost all the people you can't normally interact the same treatment other NPCS have
From left to right you have:
-Gil, finally out of his rocking chair! Because Marlon wouldn't just haul him around
-Jojamart cashier: she can't possibly be there 24/7
-Living off the Land host: he does retire after winter 25 year 2, so maybe it would be cool if he came to the valley sometimes
-Travelling Cart lady! for once, out of her cart
-Pink haired lady, she shows up at the fair, and is seen everyday at the desert
-Simon's mom/ Joja Coworker: she comes to the movie theater, the fair, and she shows up at the Jojacorps in the intro, working in the booth next to the player's one
-Miner/Worker. This guy literally breaks open the rock that blocks off the mines, and is never seen again unless you take the Joja route
-Red cap guy: shows up during the fair and the movie theater. Complains a lot
-Big Tourist guy: seens pretty ordinary for a tourist
-Welwick: good and old friend of the wizard. Possibly a fraud. Enough said
-Blonde Movie Theater guy: he only appears at the movie theater. He looks nice, that's it
-Sketchy guy. He sells you some stuff at the desert, where he is everyday. Also seens to like movies.

Would love to see some development with Simon and his mom.
About Simon and his mom, so do I! She feels almost like an easteregg. She's there at the jojacorps, she's on the bus too in the cut part of the intro, comes yearly to the autumn fair, and will often pop by on the movie theater. And about Simon, I had just sprited him a moment before I saw your comment. Here's him, next to his mom. He was, of course, based on Vincent, but I'd reckon at this point he's unrecognizeable.
Did you had any other characters on your mind besides these, and the more obvious like Gunther, Marlon, Morris and Sandy needing some work? I've thought even about adding one-off characters like the Mr Qi bouncer and the goblin henchman from the Witch Swamp
