Should consider making the horse stamina bar a secondary one that runs alongside the normal stamina bar as to tell player stamina that gets used while power attacking on horseback.
Working perfectly on 1.5.97 bobw with Edge UI (SkyHUD-based) paired with Infinite Horse Stamina Out of Combat. Seamless. Ever since Edge ditched the TrueHUD player widget, this is the biggest feature I've been missing, so thank you!

Although it would be even better if you also implement a horse health bar in a similar way. I've found a similar mod that implements both bars at once, but it is implemented through *.esp and scripts (*.pex files). Besides it's not on Nexus - DS Horse Meter (Horse Stamina and Health Widget) v1.1SE (registration is required in order to download the mod).
EDIT: A customization for X/Y position of the bars wouldn't hurt either, as well as a color customization (say brown for horse health and light green for stamina by default) or HHP/HSP abbreviation in order to distinguish the new horse health and stamina bars from HP/SP bars of the player's character (cause player's HP/SP bars show up when they are not full in a mounted combat too, as you know).
