There are some messed up files in the 4k (and 2k I think) texture files. The old ones, while less convenient, have all the correct textures. Download all the different areas individually and combine them.
installing this has been a complete nightmare, had older mod files on the computer followed step by step guides and when i go to launch either seemless coop or the normal game it loads for a brief second then cuts off. A complete waste of 3 hours. I tried editing the config_darksouls3.toml file to false. Still didn't work. when you spend as much time as I assume you have making such a massive improvement to the game then why not make it even a little bit more straightforward for people who aren't as clued up to install. My mod folder is huge and I've never not been able to install something because I'm a somewhat "casual" modder but this is an absolute pain in the ass man cmon. At least give us some basic steps to set us in the right direction in order to enjoy what you've done and endorse you..
I had to do some digging to figure this out (new to modding as well!), but with UXM, here's what to do:
Download whichever mod files you please. I recommend the individual area downloads under "Old Files" for reasons explained below
Dowload UXM, obviously, and launch it (it is listed as a Sekiro mod but works with DS3 and Elden Ring too)
Set the path to your DarkSoulsIII.exe file in the UXM menu
Click "Unpack" (this process will take a long time, maybe 30 ish minutes? I wasn't counting)
Unpacking takes the Data0.bdt, Data1.bdt, etc., files and turns them into file folders that you can play around with and change things within. For example, textures..!
Click "Patch" (decently quick process, maybe takes a minute)
Patching the game modifies the DarkSoulsIII.exe file such that it will load assets from the aforementioned folders instead of the DataX.bdt's. You are now forcing Dark Souls III to load textures from folders such as "chr" and "map"
Now, go to wherever you downloaded the .zip files from this mod
Extract them all, wherever you feel like it tbh. I don't recommend doing it in the DS3 folder itself, but it shouldn't cause any issues. Better safe than sorry though
Copy the "map" folder from each unzipped folder and paste it in the DS3 game folder, i.e. [drive letter]:\Program Files (x86)\Steam\steamapps\common\DARK SOULS III\Game. Same for the character textures, except with "chr" folders instead of "map" folders.
Click "Replace" if/when Windows gives you a popup saying "There are x files in this location with the same names" (assuming you are using Windows OS, ofc)
Done
That being said, the combined .zip files (the ones labeled Part 1, Part 2, Part 3) have some missing textures in them. I've found that the individual area .zip files under "Old Files" in Nexus have more textures but are more taxing on the computer. As for ModEngine v2, I'm not experienced enough to say how to do this. Hope this helps.
In a couple hours, I might see if I can get them working with ModEngine v2. If I can figure it out, I will edit this post and explain how I did it.

I'm currently downloading the 4k versions, how much fps loss could I expect? my specs are i7 8700k, gtx 1080, 64 gb ram and I game at 1440p
You won't get banned for editing textures. The game usually only gets suspicious if you do something like increase your character level a whole lot for free or give yourself invulnerability.
I downloaded the files twice now, but still getting error when extracting (using WinRAR). I download many other huge textures from Nexus with no issue. So, not sure what is happening here.

Does this mod has new textures for armors and weapons? I've already installed one for that. And if it does, will it breake my game? You know because there are two textures for weapons and armors

and the game looks the same , such a lousy explanation (sorry) , clearly this is not enough for someone who just use mods for the first time.
