If the knight's horses are anything like Torrent (in regard to textures), then the mane and tail would be in common_body.tpf which is in the parts folder. Torrent uses AAT500_Hair_02_a. As for the animations, I don't have much experience in that area. I attempted this very thing months ago, and from reading through the Souls modding Discord, it would take a lot of careful re-rigging of the model/skeleton. Modder ApolloHoo has made a ton of Torrent model replacers that achieve this, maybe you could reach out to them for some advice?
The problem is that the cuckoo knight horse only has 1 set of textures (Albedo, metal, and normals) in its txbnd file. If parts of the model link to textures in another txbnd file, I dont know how to find them to rebuild the UVs and assign the textures to them.
As for the animations, ive already cast lines in discords and some peoples' dms, and I have an idea or two i can try myself, but after the horsepocalypse i put myself through for a week, i still need some time to get the UV map horse face out of my nightmares before getting back into it
to give a quick update on the matter. I decided to try my hand at the models again trying to get the physics working based on some ideas I had. I was immediately stopped dead in my tracks when I noticed the clothy parts of torrent (saddlebags and tail) aren't labeled as cloth bones in the model (I was following a tutorial on getting custom meshes to have cloth physics, and that was based on armor models, not torrent), so however you get models to inherit torrent's physics has to use a different method than the one I was following.
One of the dms I sent asking for help was, in fact, ApolloHoo, but he hasn't responded, so it seems until I can get a hand with this or someone to send me in the right direction, Project H 2.0 is frozen
Thanks to some people much sharper than myself in the souls modding discord, we got to the bottom of what was breaking a lot of horse mods, and put together a little workaround that allows torrent mods with physics enabled to be saved as bnds without crashing the game.
This let me get the tail physics working, and it let me also take a crack at getting the banner's physics working, but, unfortunately, I couldn't get them working in a way that looked good since they have to be attached to the saddlebag's physics, which, well...dont do a lot of clothy swooshing as much as they do of flopping around, and it wouldn't fix the problems i had with them having no physics anyways
I finally got around to looking at this thread again, glad you got it working! I recently underwent my own journey into model editing with giving the player Commander Niall's prosthesis when wearing the Veteran's Greaves. It works perfectly, with proper movement and uses the bones of the leg armor. The hardest part was the weight painting, which I had no idea was a thing until this project. It got me thinking about your mod, and wondering if the cloth physics wouldn't need to be weighted properly. They'd "flop" like Torrent's saddlebags but it'd work.
I think that's what ApolloHoo did with their Tree Sentinel's Horse mod, as the armor on the back of the horse "flops" like the saddlebags do.
Yeah thats what i was thinking too, but the saddlebag's physics wouldnt work while still looking good with how long the banners on the knight horses are. Maybe an issue i couldve solved with proper weight painting, but all the work it would've taken, I decided it wasnt worth it, I have too many other things to worry about right now
I would be VERY interested to know what the workaround fix y'all found for these torrent mods is, the tree sentinel horse mod has been abandoned for a while and is in a very unstable state where it works sometimes but also causes random crashes when mounting. but now in this latest patch it seems the textures have broken and will only load correctly on reference maps where a tree sentinel actually is so it needs a full rework at this point and I'm getting a very thanos mood about it because for such a cool torrent skin I can't believe noone else has fixed it yet. also is this just a model mask or is this horse fully tooled onto torrents skeleton? ive heard both are possible but im not sure about the advantages/disadvantages of either. tyvm in advance and if you know anyone else I should try reaching out to on servername to get some relevant info that would be fantastic!

can you please make the horse a little bigger it seems like youre riding a pony i would love to otherwise great work its awesome like the size of the normal horse found in the world i would much appreciate it

ill be honest, when i started making this, I had the idea of possibly continuing on to do every knight horse, but after the hassle it took to get this working, i changed my mind.
So nah, unfortunately, I don't have plans on doing any of the others.
if you're interested in a slightly easier personal project, you could probably take this model, and just edit the textures to match the leyndell style
You'd just have to unpack the leyndell horse model to get at the texture, unpack this mod to get at ITS texture, and paste the leyndell texture over top in photoshop or gimp, then repack it
Following model swap tutorials and running the result through this tool in the ER modding discord (https://discord.com/channels/529802828278005773/529900741998149643/1099605379257733141), it should be pretty easy to remove the banners, feel free to upload it too if you want, but I probably wont make it myself. The banners are one of the main reasons i wanted this horse model
i tried making a custom hair style without any tutorials and it was a very painful process, that description resonates with me on a spiritual level. good work and nice mod!
