I believe missing textures display as black in Unreal. Blue could be maybe an MRA or a decal layer being viewed without the diffuse. My guess would be that the mod overwrote (or changed the path to) the diffuse texture so when you installed/uninstalled the mod it removed the texture entirely (or failed to correct the file path). So, the engine is likely only loading the the remaining texture maps (AO/spec/normal/etc.) which is why you are seeing Weird s#*!(tm).
If verifying local files doesn't do anything, you can try to delete any PAKs which affect Aerith, but I can't guarantee success with that -- my issue has powered through several installs.

But why does this mod override or is overidden by any outfit mod? Is the hair tied directly to the outfit?

I see it's working with Fancy Clothes, but not the other 2 Clothes...
