Cutscenes are really difficult because they pull their FOV dynamically. Editing the FOV on the cutscene object does nothing, unfortunately. There might be a way to do it, but I didn't feel it was worth pursuing.
Same thing with jumpscares, though I think those would be easier. I think they're more effective with the FOV they come with. Too short to get motion sickness.
All said, I think 99% of the way there is good enough. If you want to change the other elements, give Unreal Engine Unlocker or the console with UE4SS a shot. UE4SS is the F10 key and the command is "FOV ###."
The black boxes don't detract. I've played the game with the unreliable FoV before, and there is a lot of clipping and seeing out of bounds during the first aid station and trash compactor cutscenes. The black boxes work perfectly for this.
