I found out if you use the scroll wheel while the backpack is open while empty crashes the game like how you described, a way to fix this is to close the backpack when it's empty
Just as a warning, there do seem to still be some bugs involving certain items disappearing when attempting to retrieve them from the backpack. It's not a dealbreaker, just be careful with what you're putting in there.
Things I have found that cause problems:
Engine parts but only some (e.g. parts from Fleetari's seem to disappear, while parts in your garage don't?)
Packages from Teimo's, but only some (e.g. packaged fuel gauge disappeared, packaged ratchet set did not)
Things that seem to be backpack-safe as far as I can tell?
Groceries or consumables - beer cases, food, anything from Teimo's shop
Using MSC editor, I can see that the mod teleports the items to a specific location, and sometimes when saving/loading, it can lose track of certain items, which remain at that location. So the backpack is more like a limited teleporter that is supposed to work on a 1-in-1-out system, and what we see is the list of items that we have teleported and can teleport back.
What this means is you CAN recover MOST of these items by loading the related file (defaultES2file, items, mods, ect.) and using the MSCedit teleport function to place it somewhere you can access.
These items are usually boxes (not named in backpack, their slot is still occupied, but no text is shown), but there are other objects that can get stuck, like the turbo sticker for some reason.
I think this is because the game recognises these objects as their contents, for example: buying the AFR gauge and inspecting it's location in MSC editor, it shows up as the part, not the box. The box appears to be a temporary pseudo-object that isn't saved in the game files in the same way as the actual part.
The mod probably doesn't handle saving/loading these temporary pseudo-objects well, so they sometimes get left at the teleport location when it pulls up the index of items 'inside' the pack for us to teleport back. I'd recommend placing boxed or cloned items (like spare copies of parts from fleetari's/used parts guy, note that the GT hubs aren't clones of the usual wheels, they have unique ids) on a stable surface before saving, and picking them back up on load, or just opening them first.
this mod works for me but i dont like the yellow font and i would love it if u would make a option where u can only pick it up if the menu is open bcz the old carry more mod is stuck at phase 2

This bug seems to be caused by picking up empty containers and they wont appear in the backpack gui and are not interactable. BUT if you use the drop everything bind (Default left shift + u) it will drop everything INCLUDING those pesky empty bottles!
Edit: As others have said. Don't pick up empty brake fluid bottles. I found 2 "hidden" in the backpack (slot said empty but actually had empty bottle) they cause all kinds of problems (game crashing) when they're in the backpack. Engine parts will disappear. From off the shelf at home, Fleetari, broken pistons off the ground ect. Don't pick up engine parts! (wheels and other car parts are ok)
Haven't had any items disappear on me yet (I did accidentally put the coffee cup underground but it spawned at the junkyard) the issue I've been having is if I put an item in the backpack (coffee cup, firewood and grilled pike always do it so far) then drop the item from bag but keep it in "hands" and rotate it with scroll wheel while the bag is still open, the game crashes.
game has also crashed when backpack was open and went to open gas tank on boat (scroll wheel again)
Also, when I tried to fill my 10 slot bag with grilled pike, it became "full" at 8 and I couldn't put anything else it it, pike or otherwise
