thats because its a video game, and things dont need to be realistic, also fun fact, did you know Hammerfell isnt a 100% desert? just like how skyrim isnt 100% a frozen shitty off brand medieval apocalypse
To give another, albeit weaker example, look at images of Oregon and then the Mojave Desert and see where they are on a map. Tamriel may have geographical issues, but the position of the Alik'r Desert in relation to Skyrim is not one of them.
Aside from the clearly fantasy elements of this franchise, take a gander at the geography between Skyrim and Hammerfell - an incredibly mountainous region which spans much of the northern and eastern border of the latter region, which in turn keeps northern frigidity and southern heat separate. Compare this to the real-world Tian Shan mountain range which separates the hyper-arid Taklamakan desert from southern Siberia and, remember, these things are not so cut-and-dry as Minecraft biomes.
Now, go ponder the existence of the Atacama desert, where thousands of ice spears grow out of the ground in one of the driest places on Earth...
tall enough mountains can cause drastic weather changes. this is true in California once you pass the main mountain ranges. either you cross into Navada or Arizona which both are very hot deserts. large mountains trap heat like a bowl Phoenix is a great example. do more research on these things, they are very interesting.
If you played The Elder Scrolls Online, some of the border regions between Hammerfell and Skyrim (Craglorn, Bangkorai, etc) are different in biomes than snowy/desert. They're more of a mountainous/green region.
Solstheim is the small purple landmass in the SEA OF GHOSTS, between the left strip of land of MORROWIND, and the center island of VVARDENFELL;
After a quick history refresh, I can share that SOLSTHEIM was supposed to be part of SKYRIM, as in physically connected to it in the MYTHIC ERA, but after a battle in which supposedly MIRAAK was part of, it was physically separated from the mainland, and became the island sitting above MORROWIND. This is why Solstheim has tons of Nordic structures and influence, such as the SKALL, but was later colonized by DUNMER, specially being mostly populated by them after the RED YEAR.
Also as an extra reminder, Solstheim was also SNOW ELF territory, just like Skyrim, before YSGRAMOR and his company of ATMORANS slaughtered them all into the submission of the DWEMER, as retaliation for the NIGHT OF TEARS. As far as I know, there is no archeological remains of SNOW ELF culture in either the DRAGONBORN DLC for Skyrim, or the BLOODMOON DLC for Morrowind in game playable spaces.
