Do the healing items ever replenish? I am using this as a main save pretty much now, just wasnt sure if that would happen eventually after using them all?
That's because the save's armor set is using transmog! Transmog changes the appearence of your armor. You change it to whatever you want besides the blacksmith!

Hey, just wanted to say your save files seriously saved me. I accidentally deleted all my saves and couldn’t find an unmodded save file for a standard new game anywhere. But thanks to your save file and the new “recover save” option from the new khazan update I was able to load your unmodded save from your first playthrough. Quick question though: in that playthrough, does the final boss have two or three phases? I’m aiming to unlock the true ending achievement, and I want to make sure I don't miss anything. Thanks again!
